Solaris is a variety obtained in 1975 in Germany at the Freiburg Institute by crossing different white grape varieties. VenticinqueDieci was born at around 980m above sea level, in the municipality of Romeno (TN), in the Upper Non Valley. The calcareous-clayey and medium-deep soil is characterized by a low percentage of skeleton but the slope of the land still guarantees management of the optimal water. The first Solaris cuttings were planted in the spring of 2016 with a planting density of over 7000 plants/ha to limit the load of grapes per vine and consequently maximize quality. The Solaris variety is usually characterized by an extremely early ripening period but, given the altitude at which it is grown here, it usually does not reach optimal ripeness before the second ten days of September. The harvest, in September, takes place strictly by hand and the grapes are transported in small plastic boxes to preserve the integrity of the bunches as much as possible. After a soft pneumatic pressing of the destemmed grapes, the must is left overnight to decant before being decanted and added with selected yeasts. Fermentation in stainless steel barrels takes place at a controlled temperature and lasts approximately 10 days. Once fermentation is finished, the wine is decanted and remains until the end of spring to refine in stainless steel barrels before being filtered and bottled.
