Organic
Manual harvest at the end of September; maceration, pressing, spontaneous fermentation in steel, maturation for 10 months on the fine lees; bottling without added sulphites.
Straw yellow colour; nose of white flowers, broom and acacia honey, with sulphurous notes. Sip of great minerality and persistence of aromas.
Starters, fish first courses, raw seafood, cheeses.
