The vineyard is located in the northern part of the volcano, in the Calderara district, at an altitude of 650 meters above sea level. The soil is volcanic, rich in minerals and skeleton. The grapes are harvested manually at the end of September, pressed and destemmed, and placed in steel in contact with the skins for 2\/3 days, starting fermentation spontaneously. Pressed with a manual press, the fermentation ends at a temperature between 20 and 24\u00b0C and carries out malolactic fermentation.
