After the hand-harvested harvest, the bunches are selected on a double sorting table, before and after destemming. Each variety and each parcel is vinified separately. The alcoholic fermentation takes place in stainless steel vats at temperatures of 26-30\u00b0C for two weeks; followed by maceration for approximately 10-15 days. The malolactic fermentation which begins in the steel vats then ends after being transferred to barriques (25% new and 75% second passage). The wine remains in barriques in the Ornellaia cellar at a controlled temperature for a period of approximately 15 months. After the first 12 months, assembly is carried out and then reintroduced into the barriques where it rests for another 3 months.
