Manual harvest starting from the third week of August with crushing, destemming and subsequent vinification with maceration of the skins. After 4\/6 days it is drawn off and the flower wine thus obtained is sent to small thermo-conditioned stainless steel tanks to complete the fermentation. In late spring, the entire batch of wine from the relevant vineyard is bottled for long fermentation.
