Manual harvest with selection of bunches without mould, harvested late in the third ten days of October with natural drying on the vine. The grapes are destemmed and pressed with cold maceration for 24 hours, soft pressing and cleaning of the must. Fermentation lasts about two months at a controlled temperature, until the natural fermentation block.
