The only DOC wine produced and bottled on Capri. It expresses all the minerality of the island’s limestone rock and the savouriness of the surrounding sea, as well as the beautiful acidity stirred by the winds that blow through it. After being harvested by hand and a careful selection, the grapes are delicately worked in the press (soft pressing), the must obtained is left to ferment at a temperature of 16\u00b0 and then refined in steel for the following 5 months.
