Dolcetto
Soft pressing with destemming, maceration in the presence of the skins for approximately 5/6 days at a maximum temperature of 25/27°C. The wine matures in stainless steel tanks where the malolactic fermentation completes and is then decanted. Bottling in April/May followed by a brief aging in bottles laid down.
Bright ruby red color with mauve reflections; fruity, delicate nose of red fruits such as cherries and black cherries. Dry, elegant, harmonious sip with good persistence and roundness.
Tasty appetizers, meat-based first courses, roasted white meats, medium-aged cheeses.
