Description

Manual harvesting in the second half of September, with selection of the grapes in the vineyard and traditional drying in crates placed in the drying loft for 120 days; red wine vinification in contact with the skins, with two daily pumping-overs and a delestage halfway through fermentation; the wine matures for 1 year in barriques and 2 years in 25hl oak casks; it is aged for a long time in the bottle before being put on the market.

Tasting

Garnet red colour; nose of jammy fruit, black cherry, cherry and vanilla, with hints of withering and spicy notes. Great structure on the palate, complex, elegant and velvety.

Stewed red meat, braised meats, game, mature cheeses.
