40% Corvina, 30% Corvinone, 20% Rondinella and 10% other vines
Harvesting is by hand, carried out in the second half of September. Vinification is carried out with refermentation of the vintage Valpolicella on Amarone marc for about 5 days, with brief pumping over to keep the cap wet. Maturation in large wooden barrels for 18 months.
Brilliant ruby red. Aromas of red plum, marzipan and exotic flowers with a light saline nuance. Juicy and enveloping on the palate with a marked acidity that keeps the red fruit and spice aromas intact. The persistent finish enhances the purity of the fruit.
Perfect to serve with roasts, semi-mature cheeses and savoury first courses.
