Bourgeois – Diaz

Fourth generation vigneron, Jerome Bourgeois cultivates seven hectares of vineyards in Crouttes-sur-Marne and the surrounding villages of the Vallée de la Marne; the production philosophy is guided by the principles of biodynamics in the field and by a natural approach in the winery, where the grapes ferment spontaneously and the transformations are accompanied without particular interventions. Jerome has 40 year old vines at his disposal, which have their roots in clay and limestone soils, and whose grapes are worked in a parcel-based manner; the winemaking generally proceeds 60% in steel, 30% in wood and 10% in cement tanks or amphorae and sandstone eggs.
