In the field the vineyards are grassed and rich in all sorts of wild herbs; the treatments are done exclusively with fermented herbs and essential oils, and only in years that require it. Two presses are used in the winery, one of which is German with a vacuum mechanism, made to measure; the wines ferment spontaneously and age in Austrian wood, without filtration, clarification, or the use of sulfur dioxide in winemaking.
