Domaine Achillée

Domaine Achillée is located in Alsace, in the municipality of Scherwiller and is the fruit of the passion, intuitions and work of Yves Dietrich, today supported by his sons Pierre and Jean; in 1991 Yves took over the family wine business, converting it to organic in 1999 and biodynamic in 2003; it starts by giving the grapes to the cooperative winery, and then starts producing its own wines directly; in 2017 he built a bioclimatic winery made entirely of wood and straw, the largest construction of its kind in Europe; production is an expression of naturalness, tradition and creativity; manual work and non-interventionist winemaking, use of only indigenous yeasts and absence of additives in the winery, homeopathic use of sulfur dioxide, and only if strictly necessary.
