Nicolas Carmarans, who grew up in a family of restaurateurs, opened one of the first artisanal wine bars in France in Paris; after many years behind the counter, from 2002 to 2007 he began to try his hand at winemaking, and then dedicated himself full time to his wine with the purchase of a plot of land in Montezic, in the Aveyron. No use of chemicals, sulfur dioxide to the bare minimum.
