The History
The winery was founded in 1997 by Caroline Pobitzer, originally from Alto Adige, together with her husband Jan Hendrik Erbach, an oenologist and winemaker with long experience, united by their deep passion for the hills of Montalcino and the production of great wines.
Terroir & Winery
The property includes four small vineyards, cultivated following biodynamic principles. The approach in the field aims for maximum quality, while the process in the winery takes place in a natural and non-invasive way. In the vineyards, synthetic chemical products are avoided, replacing them with biodynamic preparations, manure and green manure. In the winery, fermentations take place in steel or wooden conical vats, without temperature control and with long macerations. Only native yeasts are used and the refinement takes place in large barrels, following the best traditions.
