Manual harvesting, brief cryomaceration on the skins in a soft press followed by cleaning of the must by flotation of the sediment with nitrogen; fermentation is thermo-controlled at 15°C and locked at 12.5% vol. alcohol, with chilling and tangential filtration. Maturation in steel with periodic suspension of the lees by injection of carbon dioxide.

Light pink colour with violet hues; nose of freshly harvested red fruit, pleasant, elegant and slightly mellow on the palate.

Aperitifs, light appetisers, shellfish, cheeses.
