Manual harvesting in 20 kg boxes, extraction of the free-run must with soft pressing, static decantation of the must for 12 hours, fermentation at a controlled temperature of 18/20°C. Maturation in stainless steel tanks for 9 months, refinement in bottle for 12 months.
Slightly intense yellow color, with orange reflections; nose of quince and green apple, slightly aromatic sip, good structure with a acidic finish, typical of the grape variety.
Seafood first courses, spicy white meats, slightly mature cheeses.
