Destemming, fermentation at a controlled temperature of 28/30°C; 10/14 days in contact with the skins, with various delestages, racking. Malolactic fermentation completely carried out in wood, maturation in wood for 18 months.
Intense ruby red colour; nose of small red fruits, with balsamic notes and spicy hints; Medium-bodied, juicy sip, with hints of fruit and spices.
Roasted meats, meat-based first courses, medium-aged cheeses.
