Manual harvest in bins; the whole bunches are cooled overnight in a cold room, then pressed without destemming in the absence of oxygen; the fermentation is triggered by the pied de cuve without the addition of yeasts; matures on fine lees for three months, with batonnage during the first month and at least three rackings before bottling; bottle aging for at least three months.

Straw yellow color with light green reflections; fresh nose of wet sandstone, basil, crunchy pear and apple; smooth and mineral sip, saline, with a fresh almond finish.

Seafood appetizers, crustaceans, molluscs, white meats, lightly matured cheeses.
