Description

Harvest in the second half of September; maceration and fermentation at a controlled temperature of 24°C for 7 days, malolactic fermentation, secondary fermentation with the short Charmat method (2/3 months) at a controlled temperature of 15/18°C.

Tasting

Ruby red color with persistent perlage; fruity aromatic nose of cherry, blackberry and blackcurrant; fresh and enveloping sip, very pleasant.

Ground appetizers, cured meats and cheeses.
