It comes from basaltic-tufaceous soils rich in microelements, cultivated on steep terraces with a simple pergola. Harvested by hand in early October, the grapes are destemmed and gently crushed. The must is immediately cooled and led to fermentation in steel, at a controlled temperature for 20 days. The wine matures in stainless steel on the fine lees for about seven months, accompanied by constant batonnage.
Balance and savouriness. Notes of aromatic herbs, white flowers and citrus fruits. Structured palate, with an important mineral note that recalls the volcanic soil matrix. Soft, with a long harmonious finish.
First courses, fish menu, risottos, vegetable soups, cheese, eggs and asparagus.
