Description

Manual harvest in boxes with night selection in the vineyard, followed by further sorting on a manual selection table. Cold maceration on the skins for up to three or four days, then separation of the skins and fermentation of the must in steel and, for a small part, in acacia tonneau. Maturation for 11 months on the fine lees in the same fermentation containers; 8 months aging in bottle.

Tasting

Straw yellow color with golden reflections; nose with intense and very elegant hints of white and yellow flowers, and fresh yellow fruit pulp, with pleasant notes of white pepper and chamomile. Sip of excellent balance between acidity and softness.

Pairings

Raw or steamed fish, fresh cheeses, white meats.
