From 70% direct soft pressing and 30% carbonic maceration, spontaneous fermentation, no filtration, two decantations during the waning moon phase.
Bright straw yellow color; nose of citrus, wildflowers, and white-fleshed fruit, with subtle notes of wild herbs; fresh and mineral on the palate, harmonious, with good acidity and a long finish.
Seafood appetizers, grilled vegetables, and lightly aged cheeses.
