Description

Manual harvest in bins with selection in the vineyard; traditional winemaking from spontaneous fermentation with daily pumping over for 8/10 days; racking and soft pressing of the pomace with immediate reintegration of the free-run must; the wine ages in new barriques for 24/30 months.

Tasting

Deep ruby red colour; nose of black cherry and morello cherry, blackcurrant and blueberry with hints of liquorice; enveloping and complex sip, with very long persistence, with ripe tannins and spicy returns.

Stewed red meats, braised meats, game and game, mature cheeses.
