Brachetto
Red vinification, destemming of the grapes, maceration and fermentation with the skins at a controlled temperature for a few hours (36/48) at around 16° C, subsequent pressing. The second fermentation takes place in an autoclave for secondary fermentation (until an overpressure of 4 bar is reached) at a controlled temperature for 20 days at around 16° C. At the end of fermentation, stabilization with refrigeration at -4° C, then microfiltration and subsequent bottling. Bottle refinement for a few weeks.
Not very intense, lively, brilliant ruby red color with light pink reflections and an abundant and persistent foam. Clean, complex and aromatic nose, with hints of rose, raspberries, cherries and spices. Delicately sweet sip, full but not cloying, thanks to a pleasant flavor and persistent aftertaste.
Dried pastries, desserts based on fruit, cream and chocolate.
