Type of blend of 15 varieties of white grapes, coming from a centenary vineyard: 2/3 native Trieste varieties: Malvasia Istriana, Vitovska and Glera; 1/3 variety from the neighboring wine-growing areas: from Collio (Friulano, Riesling, Sauvignon, Pinot Bianco and Ribolla Gialla), from the Vipava valley (Klarnca, Pinela and Poljsakica), also present Malvasia Bianca Lunga, Auxerrois and two unknown varieties, again unsecured and not certified in the World DNA Bank.
It originates from a historic, 100-year-old vineyard. There are over 15 white grape varieties: 2/3 indigenous varieties from Trieste, 1/3 varieties from neighbouring wine-growing areas, plus two unknown varieties that are still free-standing and have never been mapped to date. The late harvest, carried out by hand, takes place on the same day. The grapes are gently destemmed and crushed, left to macerate and ferment with their own yeasts. No temperature control or addition of sulphur dioxide. It is then aged for 2 years in Slavonian oak barrels with natural toasting.
A wine of great intensity and breadth. Very elegant nose of fruit and flowers; dynamic and enveloping, savoury and spicy on the palate. Long persistence.
Mature, blue and spicy cheeses, game dishes.
