Description

This Cuvée comes from the biodynamic cultivation of some parcels selected among the Grand Cru vineyards of the Côte des Blancs, treated according to the most ancient champenoise tradition of the Mesnil-sur-Oger area. It vinifies and carries out the first fermentation in steel at a controlled temperature, without carrying out malolactic fermentation. Second fermentation with the addition of selected yeasts, 42 months on the yeasts with manual remuage on the pupitre, disgorgement with volley. A Blanc de Blancs that is at the same time traditional, because it is an expression of its territory, and modern because it looks to the future by choosing essentiality.

Tasting

Brilliant and intense colour, a light and dazzling gold also thanks to the very fine perlage which enhances its reflections. On the nose, an intense and characteristic chalky minerality immediately gives way to the elegance of the citrus fragrances of lemon flowers and orange blossom. The very present action of the yeasts gives notes of biscuits and toasted bread. In the mouth it is fresh, mineral, decisive and dry with vinous hints. The soft bubbles leave a tasty silky patina on the palate immediately shaken by the explosive freshness that persists in the center of the palate. A champagne with good body and extremely easy to drink.
