Soft pressing of the grapes, static clarification carried out at 12°C, racking and fermentation at a temperature of 18°C. Bottle refermentation process carried out very slowly at a constant temperature of 12°C in the tuff quarries of Castello d’Uviglie, originating from the 11th century. Permanence on the yeasts for 44 months at a temperature of 12 degrees.
Straw yellow with fine and continuous perlage; nose of marked freshness and fruit, harmonious and crunchy sip.
Dishes based on fish, crustaceans, molluscs.
