Manual harvest in small boxes with selection of the grapes in the vineyard between the last ten days of August and the first ten days of September. Vinification: the soft pressing of the whole bunches involves the use of 60% of the free-run must, the cold decantation lasts from 24 to 36 hours at a temperature of 10°C. Fermentation takes place around approximately 16°C. Maturation on the fine lees for approximately 6 months, carried out in stainless steel tanks; a part of the base wines undergoes malolactic fermentation depending on the vintage. Bottle aging on yeasts for 48 months.
Fine and continuous perlage, bright straw yellow. On the nose, the biscuity note at the start evolves towards the sweetness of acacia honey, candied fruit and beeswax. On the palate it is fresh, balanced and slightly citrusy. Good persistence.
Ideal as an accompaniment to an aperitif or the entire meal. Try it with structured first courses such as baked pasta and richly creamed risottos. The combination with raw seafood is interesting.
