50% Chardonnay, 50% Pinot Noir
Manual harvesting at the end of August; extraction of the free-run juice only by soft pressing, alcoholic and malolactic fermentation partly in steel and partly in oak barrels; once assembled, the wine is bottled for the tirage phase, with a minimum 36 months’ rest on the lees before disgorging.
Golden yellow in colour, fine and persistent perlage; nose of dried apricots and nuts, with floral and mineral hints; ample and creamy on the palate, with good acidity and body, and a long, harmonious finish.
Crustaceans and seafood, fish main courses, cured meats and mature cheeses.
