Destemming, short maceration in pneumatic presses and delicate pressing. Cooling of the must and decantation in insulated tanks Fermentation in stainless steel tanks at a controlled temperature (14°) for approximately 20 days. Maturation in steel tanks for 7/8 months. Bottle aging on yeasts for approximately 3 years. Remouage with giropallettes.
Lively pale pink color with fine and persistent perlage. Nose with delicate hints of raspberry and cherries, hazelnut and sensations of yeast. Mineral, fine, good intensity and persistence with hints of red fruit, dog rose, pomegranate.
Tuna tartare, spaghetti with sea urchins.
