Harvested and sorted by hand into small crates. After a second selection, the grapes are left to dry in a ventilated loft for 100 days on traditional racks. Pressing takes place in January, and fermentation takes place slowly for 30 days in oak vats, using only indigenous yeasts. Aging lasts four years, with the first year in barriques and the next three years in 35-hl Slavonian oak barrels. The wine then ages in bottle for at least one year.
Intense ruby red color with garnet highlights; elegant and complex nose, with notes of ripe red fruit, cherry, blackberry, and plum, and spicy hints of licorice and bitter cocoa. Full-bodied and austere on the palate, with enveloping tannins and a fresh, persistent finish.
Stewed red meats, braised meats, game, mature cheeses.
