Manual harvesting and selection of bunches from the single Vigna del Capriolo; spontaneous fermentation and maceration for 30/40 days at a controlled temperature of 28/30°C in steel. Maturation for 48 months in two 10hl Slavonian oak barrels, refinement in bottle for 6 months.
Ruby red color tending towards garnet; nose of dark red fruit, with balsamic and spicy notes; elegant sip, with good structure and acidity, important tannins, dense and velvety, great persistence.
Grilled red meats, stews, game, mature cheeses.
