For the processing of the fermentation process takes placeed grapes, rotary winemakers are used which allow a complete extraction of the aromatic components of the grapes. Fermentation takes place at a controlled temperature of 26°C for 5 days. Aging in steel tanks for 6-12 months and then resting for 2 months in the bottle at a temperature of 15°C.
Ruby red color with purple hues; on the nose it is fine and aromatic, with hints of violet and geranium. In the mouth it is soft and velvety, slightly tannic with a finish of berries.
Rabbit, game, wild boar and mature cheeses.
