Manual harvest of the grapes, spontaneous fermentation with indigenous yeasts, maturation in French oak barrels for at least 18 months, refinement in bottle for 24 months.
Dark ruby red color with garnet reflections; fine and complex nose, of spices, rhubarb, cinchona, red fruit jam, blackcurrant and violet, with notes of tobacco and liquorice; powerful and elegant sip, fresh and enveloping, with imposing but soft tannins and long persistence.
Braised meats, stews, game, game, mature cheeses.
