Manual harvest in boxes; pressing and destemming, spontaneous fermentation at temperatures below 30°C, with 7-day maceration and manual punching down; the wine matures for 6 months in steel and in barriques of at least 4 passages; refines in bottle for at least 6 months.
Deep ruby red colour; intense nose with hints of forest and Mediterranean scrub; fresh and balsamic sip, elegant, with great character.
Legume soups, grilled meats, roasts, game, cured meats and medium-aged cheeses.
