Description

Manual harvest in boxes; pressing and destemming, spontaneous fermentation on the skins at 20/22°C for three days, with wetting of the cap, racking after three days; maturation in steel for 6 months, refinement in bottle for at least 4 months.

Tasting

Deep golden yellow colour; intense nose, with notes of Mediterranean scrub and spices; decisive and silky sip, slightly tannic and with good persistence.

Pairings

Seafood appetizers and first courses, white meats, slightly mature cheeses.
