Description

Hand-harvested grapes from a single plot planted with Pinot Meunier, dated 1963; the vinification takes place in two horizontal sandstone eggs, of 350 l; the base wine bottled for refermentation rests on the yeasts for at least 48 months; single vintage, no dosage at disgorgement.

Tasting

Rich and complex nose, with balanced maturity and beautiful oxidative notes; sip of equal complexity, where the oxidative notes attenuate to leave room for finesse and flavor, with a fresh and very long finish.

First and second seafood courses, grilled shellfish, porcini mushrooms, tasty cheeses.
