Savagnin 100%
Late manual harvest of the grapes, around mid-October; pressing and short maceration, spontaneous fermentation in large exhausted barrels; the wine matures in full oak barrels for six years; during this period a veil of yeasts forms on the surface, which protects the wine allowing it to slowly mature with oxidative characteristics. Bottled in the traditional clavelin, 62cl bottle.
Amber yellow colour; broad and complex nose, of hazelnuts, almonds and walnuts, with citrus and balsamic, herbaceous and spicy notes, in addition to the inevitable oxidative notes; dry and savory sip, fine, complex and very long.
White meats, seafood, foie gras, dried fruit.
