Description

Produced with selected grapes and harvested by hand in mid-October. The destemmed and delicately pressed bunches are placed in steel vats where the alcoholic fermentation takes place, with maceration on the skins and daily pumping over, for about fifteen days. Subsequently we proceed with drawing off with pressing of the skins and maturation in French oak barriques, 20% new, for a period of at least 12/18 months. Further twelve months in the bottle to complete the refinement.

Tasting

Intense and lively ruby colour. The typical floral hints of violet and fruity cherry hints emerge on the nose, together with a mineral note. The sip opens fresh and savory, continuing with fragrant fruity notes.

Pairings

Recommended for grilled meat dishes, such as Chianina steak, or with game, interesting with mature cheeses.
