Description

Manual harvesting and mechanical part. Last week of September and first of October. Vinification in thermoregulated steel tanks at 28/30 degrees. Spontaneous fermentation with natural yeasts, frequent pumping over and maceration for approximately 25 days. Aging in large French oak barrels for approximately 10 months.

Tasting

Ruby red color with garnet reflections; on the nose notes of cherries and sour cherries together with hints of red flowers and fine spices. Fresh sip, lively but integrated tannins. Good persistence.

Pairings

Ground appetizers, grilled red meats, stewed rabbit, medium-aged cheeses.
