Manual harvesting in boxes with selection in the vineyard in the third decade of October; the destemmed grapes are macerated at a temperature of 25°C until alcoholic fermentation is complete. It is then softly pressed using horizontal presses. At the end of alcoholic fermentation, the wine is decanted and left to rest in masonry vats for 36 months and then in barriques for 6-12 months.
Intense ruby red colour tending towards garnet; fragrant and delicate nose of small red fruits and violets, with salty notes. The sip is important, with vigorous tannins and hints of spices and almonds.
Game, braised meats, roasts and mature cheeses; excellent with spicy or spicy dishes.
