Cripto Asprinio d’Aversa DOP 2018

Manual harvest in boxes with selection in the vineyard in the first ten days of September; white vinification with soft separation via vacuum press; fermentation of the must at 14°C with cold stabilization; the wine matures for a year in steel on the fine lees, with continuous batonnage; bottled for second fermentation, left on the yeasts for 30 months, with remuage carried out by hand on pupitre for two months; disgorgement, dosage and bottle aging for several months.

Intense straw yellow color, with very fine perlage; intense nose of fruity, citrus and floral fragrances; dry, decisive and balanced sip.

Aperitif, seafood appetizers, raw fish.
