Manual harvest starting from the third week of August with crushing, destemming and subsequent vinification with maceration of the skins. After 4/6 days it is drawn off and the flower wine thus obtained is sent to small thermo-conditioned stainless steel tanks to complete the fermentation. In late spring, the entire batch of wine from the relevant vineyard is bottled for long fermentation. After at least 110 months of aging on its own yeasts and in its most natural color, it is disgorged and subsequently sold.
Ruby red color with light orange reflections, fine and persistent perlage; intense nose of small red fruits, raspberry, blackberry, strawberry and currant; full and persistent sip, where the red, ripe and enveloping fruit continues.
Red meats, game, mature cheeses.
