Giovacchino was one of the historic winemakers of Giglio; the vineyard today retains its name, as does the wine, to remember a man who contributed greatly to what is now Fontuccia. Destemming and cold maceration for 24/72 hours, soft pressing and static decantation of the must. Spontaneous fermentation at controlled temperature. Remains on the fine lees for at least six months.
Citrus notes and wild shrubs, broom, heather, honeysuckle, then thyme, sage, even eucalyptus; finally the brackish and marine scents of shells and fossils. When tasted, the balance of the components that recall the sense of smell is extraordinary, with a long persistence.
Seafood first and second courses, molluscs, grilled crustaceans.
