BottlesManual harvest in mid-September; soft pressing of whole grapes with separation of the must, fermentation at a controlled temperature at 15°C, batonnage sur lies daily for 2 weeks and weekly for 2 months; refermentation in the bottle, aging on the yeasts for a minimum of 52 months, disgorgement a la volée and final closure.
Straw yellow color with fine and continuous perlage; intense and fruity nose, of peach and citrus, with delicate floral hints; fresh and savory, citrusy sip.
Aperitif, seafood appetizers, cured meats and cheeses.
