Description

The grapes are harvested manually and left to ferment spontaneously with the use of only Native yeasts. The must macerates for 12 to 15 days on its skins to acquire body and aromas. The wine then ages in barriques for 22 months and tonneaux. At the time of bottling the wine is neither filtered nor clarified.

Tasting

It has a straw yellow color with golden reflections. On the nose hints of apple, cedar peel, gooseberry, peach and mineral notes due to the nature of the soil. On the palate we find a powerful, warm wine, excellently balanced by a lively fresh and savory streak. It is characterized by a long and warm finish.

Pairings

Fish soups, steamed shellfish, risotto and seafood pasta, stewed white meats.
