60% Nero di Troia, Bombino Bianco, Montepulciano, Sangiovese
Manual harvest in boxes with selection in the vineyard; soft pressing and destemming, spontaneous fermentation in conical French and Slavonian oak vats; the wine matures for 12 months in second passage untoasted barriques for the Nero di Troia, in medium toasted tonneaux for the Sangiovese; assembly and rest in steel, refinement in bottle for a few months.
Nose of red fruit with fresh notes of black cherry and currant, and a light note of vanilla; decisive sip, full and slightly sweet, with good acidity and refreshing flavour.
Grilled meats, roasts, game, cured meats and cheeses.
