Cabernet Franc 70%, Cesanese d’Affile 30%
Manual harvesting of the grapes, maceration for four days on the skins in concrete tanks, then separation from the skins, spontaneous fermentation and natural malolactic fermentation; the wine ages in cement for about 8 months, and refines for a few months in the bottle.
Fragrant nose of blueberry, raspberry and currant, with notes of aromatic herbs, cocoa and liquorice; fresh and precise sip, with beautiful acidity and tannic texture.
Game, roasted or stewed red meats, medium-aged cheeses.
