Description

Manual harvesting in boxes with selection in the vineyard; destemming and cold maceration, soft crushing and decanting of the must at 10/11°C, alcoholic fermentation at a controlled temperature of 18°C; cold stabilisation at a temperature of 4/5°C for 5 days; the wine matures in steel for 2 months and in oak barrels for a further 6 months.

Tasting

Deep straw yellow colour; delicate nose with hints of bitter almond, slightly vegetal, with slight notes of liquorice and elderflower that emerge with ageing; well-balanced palate, in perfect continuity with the olfactory sensations.

Land and seafood starters, fish-based first courses, white meats, medium-aged cheeses.
